Tips for Grilling with Smoke
The low-and-slow method of cooking (low temperatures, long cook times) has been around for hundreds of years; before the days of barbeques and smokers, open pit fires were used to cook meats over long periods of time.
Adding different types of wood chips to your smoker is a great way to add additional flavour to your meal. The most common wood chips to use are Hickory, Mesquite and Apple. For the best results, soak wood chips in water for at least one hour before use.
If you’re looking for deeply smokey meats, add wood chips to the smoker about 10 minutes before adding your raw meat for maximum flavour retention.

Smokey Bourbon Ribs
Ingredients:
2 racks of side ribs
50 ml soya sauce
4 tbsp olive oil
2 tbsp Worcestershire sauce
2 oz bourbon
1 tbsp minced garlic
Salt & Pepper
Directions:
Use the back of a blunt spoon to remove the membrane from the ribs to prepare for cooking.
Combine soya sauce, olive oil, Worcestershire sauce, bourbon, minced garlic, salt and pepper for marinade. Pour over clean ribs and let marinate in the fridge for one hour minimum.
Smoke at 225°F for 2-3 hours.
Smoked Chicken Wings
Ingredients:
5lbs chicken wings
1/3 cup vegetable oil
1 clove minced garlic
1/2 tsp chipotle powder
2 tsp smoked paprika
1 tsp oregano
1 tsp kosher salt
2 tbsp red wine vinegar
Directions:
Cut each wing at the joint to split into two pieces. In a large bowl, whisk together vegetable oil, garlic, spices and red wine vinegar.
Toss chicken wings until fully coated. Place in fridge for at least one hour to marinate.
Heat your smoker to 250-275°F. Once to temperature, add wood chips (we recommend Pecan) and place the chicken evenly over indirect heat.
Smoke the wings for approximately 2 hours with consistent smoke, or until the internal temperature reaches 160°F.
If you prefer your wings extra crispy, place directly over coals for 5 minutes each side to finish.
Remove from heat and let rest for 10 minutes. Toss wings in your favourite sauce and enjoy!
Smoked Potato Chips
Ingredients:
Potatoes
Sea Salt
Vegetable Oil
Your choice of herbs/spices
Directions:
Slice potatoes as thinly as possible or using a hand mandolin.
Cover potatoes with vegetable oil to prevent browning. Toss in sea salt until lightly coated.
Place in smoker set to 300°F on baking sheet lined with parchment paper. Cook for 1-2 hours depending on potato thickness.
Pro Tip: chips on the outer edge of baking sheet will cook faster, remove as needed to prevent burning.
